I’m just like any other human out there, sometimes life gets hard.  Flat out hard.  During these seasons of life, it’s so easy for us to forget about ourselves, worry about our own health later.  When, in truth, it’s THE most important place to steer our focus - for at least a little bit every day. My dad told me the other day, “A good Italian always has anchovies…”  Well, I must be a good Italian because I keep a small jar of anchovies in my pantry just in case we decide to whip this up for dinner.  What I like about this dish most, besides how good it tastes, is that it’s easy, simple, made in one pot, it saves on the wallet, AND my kids eat veggies! Plus, some nights, you just need a quality size bowl of spaghetti.
