Broccoli Anchovy Spaghetti - Kid Approved

The kids are back in school!  Yahoo!  We are looking forward to a great year!  But it will also be a busy year filled with fun, new adventure and activity.  Which means, this mama, needs some quick, easy, and inexpensive recipes to refer to when things get crazy.  Can you feel me?  Raise your hand!  Heck, even if you aren’t a mama, it’s good to have some easy, healthy recipes, 30 minutes and under, for those nights you just don’t feel like doing too much.  Plus, some nights, you just need spaghetti!  Some nights, that may just be all you have!

Enter this pasta dish.  Not only is cooked using one pot, but it only takes 25-30 minutes to make.  AND, the kids get spaghetti whilst eating broccoli, onions, garlic, tomatoes, and anchovies for some healthy heart omegas.  AND, they like it!  You don’t have to tell them what’s in it.  Just have them try it.  They’ll be hooked, I promise.  So will you!

My dad told me the other day, “A good Italian always has anchovies…”  Well, I must be a good Italian because I keep a small jar of anchovies in my pantry just in case we decide to whip this up for dinner.  Don’t knock the anchovy folks.  They are packed with powerhouse goodness!  They are rich in Omega-3 and proteins.  Plus contain multiple vitamins and minerals like calcium, iron, magnesium, phosphorous, potassium, sodium, zinc, thiamin, riboflavin, niacin, folate, C, B12, B6, A, E, and K.  They have the capability of reducing LDL and improving heart health, promoting weight loss, boosting brain activity, preventing osteoporosis and improving your skins ability to age well.  ALL of this in that tiny little fish.  Why not find a way to use it!?  A tasty way at that!

Here’s one of our favorite family pasta dishes.  In our house, this dish is a 4 out 4.  Which means everyone in the house enjoys eating it.  Do you know how hard that is to accomplish?!  Hope it goes well for your family too!

Broccoli Anchovy Spaghetti, Kid Approved

Christina Fit and Balanced

4 broccoli crowns, stems removed, florets chopped

1/4 yellow onion, diced

4-5 garlic cloves, diced

1-2 Roma tomatoes, chopped

1.5 oz jar, anchovies in olive oil

Olive oil

Parmesan (optional)

6-8 oz spaghetti, broken in half, or other pasta of choice.

 

Method:

Boil large pot of water, once boiling add spaghetti and broccoli and cook according to directions on package, broccoli will get soft, but that’s what you want. While that cooks chop onion, tomato, and garlic. When ready, drain pasta and broccoli in colander and let sit for a minute. Place the empty pot back on the stove, medium-high heat, add anchovies with the oil and let cook, breaking it up with your spatula until it’s in small pieces. Add remaining veggies and a tad more olive oil if needed. Let cook/sauté/simmer till onions soft and tomatoes cook down Roughly 5-6 minutes. Add pasta and broccoli back in. Add a little more olive oil and stir everything together. Add fresh ground pepper to taste. For a spicier palette add chili pepper flakes.  Serve with Parmesan if desired.

 My 8-yr old daughter likes to have a caprese salad on the side to go along with this dish.  It’s a simple salad for kids to make themselves.  Slice tomato.  Place sliced cheese on top of each slice of tomato (mozzarella works best, but my kids just go with what we have which is usually a Monterey jack or mild cheddar), drizzle with olive oil, sprinkle with dried basil leaves or a real basil leaf if you have a plant.  Bam!
